For years, the golden rule of supermarkets, distribution centers, and warehouses hasn't changed: FIFO (First-In, First-Out). Whichever pallet enters the warehouse first is shipped to the aisle first. However, the truck carrying Pallet B might have broken down on the road, its cooling motor might have stopped for 4 hours, exposing the fruit to micro-thermal shocks.

Although there are no visible signs of spoilage on the fruit's exterior at the time of delivery, Pallet B's cellular and chemical clock has started ticking much faster. While you follow the rule and send Pallet A to the aisle, Pallet B sits in the back rows of the warehouse, quietly rotting, and eventually ending up in the trash when its turn finally comes.

In fresh produce, what matters is not when the product entered the warehouse, but what it experienced on the road since production.
